Glucose oxidase is a flavor enzyme. Optimum pH is 5.5 with broad range 4 - , specificity is the enzyme is highly specific for β-D-glucose and inhibitors are Ag+, Hg2+, Cu2+ , FAD binding is inhibited by several nucleotides. It is stable in dry condition for years when stored cold and solutions are reasonably stable under a variety of conditions.
